The only vegetables I have encountered that have a decent amount of flavor are tomatoes and carrots. Most legumes don’t need much seasoning, but beans are so easy to get wrong. Nearly all leaf greens seem to need dressing, and other roots are just so bland.
Any suggestions on how to get a meat-eater to eat his vegies?

    Buy the best quality vegetables, or grow them.
    Steam rather than drown them in water, that way the veggies retain their flavour and not leach into the water.
    Do not over cook them, they are best al dente (just done) and not a soggy mush.
    Use herbs for flavouring.
    Start out with small portions so that you don’t build up a hate reaction.

    There are lots of ways to trick meat eaters into eating veggies, especially if your meat-eater is a kid. Get light, diet or low fat Ranch dressing and serve it as a dipping sauce for raw veggies, like carrots, celery, peppers, cukes, etc. Puree veggies and hide them in meat dishes like spaghetti sauce. Root veggies are best for this. (I have been married to my husband for eleven years and he still has no clue that I put pureed veggies in my spaghetti sauce). Mothers and grandmothers have been doing this sort of thing for years–Jessica Sienfeld-Jerry’s wife–has written a cookbook about it, because she seems to think she invented this idea. It’s called Deceptively Delicious. You might find that helpful.

    Mushrooms are a fantastic way to have vegetables – they are hearty and almost have a meaty texture. In fact, many vegetarians eat tons of mushrooms to make up for that “meat” factor. You can buy fresh mushrooms and toss them into your pasta sauce, or make hearty soups with them. They add tons of flavor and are so so good for you. Enjoy!

    Meatloaf… There are MANY ways of fixing it with different vegetables… then you almost can’t help but eat the vegetables all mixed up in a pile of mashed potatoes. Experiment…

    Lots of lemon and some salt that’s how i do it and i dont really like veggies and eat some nuts and try some tofu is preatty good

    Grill veggies/mushrooms or add a lil sprinkle of cheese to your veggies…don’t bathe the veggies in the cheese sauces but use a lil cheese sauce on your veggies as well :) Good Luck

    try boca burgers. my dad is a big meat eater. he never knew the difference :)
