i barley eat the many vegetables, and when i do, its mainly potato. i seem to be in good health,.. im fit (well, not at the moment), and are relatively strong for my age. is it possible to keep going like this and live healthy?

No! Potato is not really a vegetable, it’s a starchy root. You do not get anything significant from it except a full stomach. Since you’re young, you can get away with that but if you keep eating only white food and chips and other junk, you’ll start to look sick and eventually become sick from lack of proper nourishment.
Try drinking veg juices. Squeeze half a lemon in a glass and add some tabasco and a little soy sauce in it. Drink it cold. It’s delicious and it’s liquid vegetables.
You cannot be healthy without eating many vegetables. You may feel healthy and fine but as you grow older you will start to run into problems.
Nutrients you obtain from other food sources don’t compare with those you get from vegetables, especially because most are processed. In processed foods, most of the nutrients such as vitamins and minerals are lost in the process.
You’re body needs fresh fruits and vegetables to live a healthy life so I hope you take this advice.
The short answer is probably no. But that might not be 100% accurate. I believe that the vast majority of nutrients found in veggies are found in other food but might be harder to access in the right quantities. Do you eat a lot of fruit? It has many of the same nutrients but comes with higher natural sugar. So over time you’ll get a lot more calories from fruit then veggies. That’s fine if you are really really active but watch out if you slow down.
I guess so. In an ideal world it would be great if you could eat more fruits and veg, but unfortunatly that is not always possible. If you do not like the taste of fruits and veg try taking a Vitemin C supplement.
Yes, I hate vegetables. I only like potatoes and corn and I am perfectly healthy. I get my vitamins from eating lots of fruits. So if you don’t eat veggies then try eating more fruits and you should be fine.
