There are many types of plants that are bitter to taste – but are great for your body.
Greens that are bitter have a lot of phytonutrients and antioxidants in them. Garlic, onions and shallots all have important phytonutrients in them and that is what happens to make them taste the way they do! Take the ‘stink’ out of garlic and you take out the good nutrients, too.
There is an entire class of nutrients called flavanols, that are good antioxidants AND are what gives the plant flavor.
So yes – even bitter vegetables are good for you.

any raw vegetable is good for you. Being bitter does not enhance that fact so enjoy the vegetables you like with the best taste
